Slow-cooker Pintos

  Crockpot pintos are one of the easiest things to make because you throw everything in the pot and let it cook.  It is also one of your father's favorite things with Appalachian cornbread.  Plus, you can use the leftovers to make homemade refried beans, use in burritos, or freeze for later. Ingredients: 1 lb bag dry pinto beans 3 cups chicken broth 3-4 cups water 1 large sweet onion chopped 1 4oz jar diced jalapeños (leave out if you don't want a little spice) 1 4 oz jar fire roasted green chilis 1 package country ham pieces Preparation: Rinse beans and drain.  Mix all ingredients in a crock pot.  Cook on low 6 hours or on high for 3-4 hours.
