Honey Cardamom Granola
The kitchen smells like heaven when this comes out of the oven! This is my favorite basic granola recipe from my running days from the cookbook Run Fast, Eat Slow. You can play with the ingredients, swap out different seasonings, etc to make the flavors you like, such as using apple pie or pumpkin pie spice in the fall.
Ingredients:
- 3 cups old fashioned oats
- 1/2 cup chopped nuts
- 1/2 cup unsweetened coconut flakes
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1/2 teaspoon sea salt
- 1/3 cup honey (more if you like it sweeter)
- 1/3 cup olive oil
Preparation:
- Heat oven to 275
- Mix all dry ingredients together in a large bowl. Add honey, vanilla, and oil and combine well.
- Place on a baking sheet lined with parchment paper (easy clean up and won't stick).
- Bake for 20 minutes and then mix well.
- Bake another 20 minutes.
- Let cool and then break it up into smaller pieces. Store in an airtight container or jar.
