General Tso's Chicken

 


This is the best "at home" take out ever!  For a shortcut, I use Trader Joe's vegetable fried rice and General Tao's sauce.  You can make your own or find something similar in any grocery store.  

 Ingredients:

  • 1-2 cups white rice or frozen vegetable fried rice (I like Trader Joe’s vegetable fried rice)
  • 1 jar General Tsao’s stir fry sauce (I use Trader Joe's)
  • 1 pound chicken breast cut into small chunks 
  • 1/2 cup Corn starch
  • 1/2 cup Flour
  • 1 bag Steam Fresh frozen broccoli
  • High heat oil like peanut, avocado, or canola oil
  • Toppings: diced spring onions and sesame seeds

 Preparation:

  •  Cook rice in rice cooker or pot according to package instructions.
  • In a ziplock bag, combine 1/2 cup corn starch and 1/2 cup flour.  Season with some salt and garlic powder.
  • Using a heavy, deep pan or wok, add about an inch of oil and heat to high.
  • Toss and Coat chicken in flour mix, shake off excess, and add in batches to oil when hot.  Don't overcrowd the pan or wok.
  • Cook chicken in hot oil about 3-4 minutes and move to a paper towel lined plate.
  • Microwave and drain broccoli.  I like to chop big pieces a little smaller.
  • Add chicken and General Tso's sauce to clean wok or pan and cook to coat.  Toss in broccoli and plate over rice.  If sauce is too thick add a little water.
