General Tso's Chicken
This is the best "at home" take out ever! For a shortcut, I use Trader Joe's vegetable fried rice and General Tao's sauce. You can make your own or find something similar in any grocery store.
Ingredients:
- 1-2 cups white rice or frozen vegetable fried rice (I like Trader Joe’s vegetable fried rice)
- 1 jar General Tsao’s stir fry sauce (I use Trader Joe's)
- 1 pound chicken breast cut into small chunks
- 1/2 cup Corn starch
- 1/2 cup Flour
- 1 bag Steam Fresh frozen broccoli
- High heat oil like peanut, avocado, or canola oil
- Toppings: diced spring onions and sesame seeds
Preparation:
- Cook rice in rice cooker or pot according to package instructions.
- In a ziplock bag, combine 1/2 cup corn starch and 1/2 cup flour. Season with some salt and garlic powder.
- Using a heavy, deep pan or wok, add about an inch of oil and heat to high.
- Toss and Coat chicken in flour mix, shake off excess, and add in batches to oil when hot. Don't overcrowd the pan or wok.
- Cook chicken in hot oil about 3-4 minutes and move to a paper towel lined plate.
- Microwave and drain broccoli. I like to chop big pieces a little smaller.
- Add chicken and General Tso's sauce to clean wok or pan and cook to coat. Toss in broccoli and plate over rice. If sauce is too thick add a little water.
