Steak & Potato Bowls
Ingredients:
- 2 pounds sirloin filet
- Montreal steak seasoning
- 1 bag baby red or gold potatoes or a mix
- Ranch seasoning
- Shredded cheese
- Sour cream
- Other toppings: chives, blue cheese crumbles, steak sauces, hot sauce
Preparation:
- Heat oven to 400.
- Let steak come to room temp and season well on both sides with steak seasoning.
- Rinse potatoes and cut in quarters.
- Toss in a little olive oil and season with salt, pepper, and ranch seasoning.
- Spread potatoes on sheet pan and cook for 30 minutes, stirring after every 10 minutes, until cooked through and slightly crunchy on the outside.
- While potatoes cook, heat grill or a cast iron skillet to high heat.
- Cook steaks 3-4 minutes per side (medium rare) depending on thickness and remove to a plate to rest for at least 10-15 minutes.
- Slice steak into strips and then chunks.
- In a bowl, add potatoes, more seasonings if needed, shredded cheese, and sour cream. Top with steak.
- Top steak with crumbled blue cheese, a few dashes of steak sauce, or hot sauce.
