Steak & Potato Bowls


Ingredients:

  • 2 pounds sirloin filet
  • Montreal steak seasoning
  • 1 bag baby red  or gold potatoes or a mix
  • Ranch seasoning
  • Shredded cheese
  • Sour cream
  • Other toppings:  chives, blue cheese crumbles, steak sauces, hot sauce
Preparation:
  • Heat oven to 400.
  • Let steak come to room temp and season well on both sides with steak seasoning.
  • Rinse potatoes and cut in quarters.  
  • Toss in a little olive oil and season with salt, pepper, and ranch seasoning.
  • Spread potatoes on sheet pan and cook for 30 minutes, stirring after every 10 minutes, until cooked through and slightly crunchy on the outside.
  • While potatoes cook, heat grill or a cast iron skillet to high heat.
  • Cook steaks 3-4 minutes per side (medium rare) depending on thickness and remove to a plate to rest for at least 10-15 minutes.
  • Slice steak into strips and then chunks.
  • In a bowl, add potatoes, more seasonings if needed, shredded cheese, and sour cream.  Top with steak.
  • Top steak with crumbled blue cheese, a few dashes of steak sauce, or hot sauce.
