Breakfast Slop

When Knox started cooking for himself he would mix a bunch of stuff together and call it "slop". It looked gross but he swears by it. This is an easy, one pan breakfast "slop" recipe for Chatham to make at Clemson. You can put this in tacos, burritos, or big breakfast bowls. It's cheap & should last a few days.
Ingredients:
- 6 eggs
- 1/2 of a 1 pound sausage roll (like Jimmy Dean Hot)
- 1 cup shredded hashbrowns (refrigerated or frozen)
- 1 cup onions and pepper mix (I used frozen)
- 1 cup shredded cheese
- Tortillas
- Hot sauce
Preparation:
- Put a little olive oil or a tablespoon of butter in a skillet and heat to medium high.
- Add sausage, breaking it up well as it cooks.
- Drain off some of the fat from sausage but also keep a little in the pan.
- Once sausage is mostly brown, lower heat to medium and add in onions & peppers & hash browns.
- Cook covered for about 8-10 minutes until hash browns and peppers are softened.
- While that is cooking, whisk eggs together in bowl and season with salt and pepper.
- Add eggs to sausage mixture and stir continuously until done.
- Stir in cheese and hot sauce.
- Add to burrito or taco sized tortillas or make breakfast bowls with more cheese, sour cream, and salsa.
