Simple Steak Sandwiches

 


Knox loves a good steak sandwich!  When we went to visit him in Colorado in the Spring of 2021, I made these for him and his roommate along with a big batch of mac & cheese.  Needless to say he ate well that week!  The trick to this recipe is using thin cut steaks and onion rolls.

Ingredients:  
1 sweet onion, cut in half and sliced 
2-3 steaks of choice (ribeye, sirloin filets, NY strips all work well)
Slices of pepper jack cheese
Ciabatta rolls or other rolls/buns

Sauce:  
2 tablespoons Mayo
2 tablespoonsDijon Mustard
1 tablespoonsWhole Grain Mustard
2 tablespoons Sour Cream


Preparation:
Season steak with salt and pepper.
Heat a tablespoon of olive oil on a pan to medium high.
Add onions and cook about 8-10 minutes until caramelized.
Remove onions and turn up heat to high.
Add a tad more oil and 1 tablespoon of butter.
Grill steaks or cook in skillet according to thickness and desired cook.
Let steak rest 10 minutes and then slice thin.
Assemble rolls with sliced steak, top with cheese and then toast for a minute in the oven to melt cheese.
Top with onions and sauce!
