Simple Cheesesteaks
A trip to Chapel Hill is not complete without getting a cheesesteak from IP3 (photo above). It is the BEST cheesesteak! We also love the cheesesteak at J. Michaels Philly Deli in Wilmington, a classic. Below is an easy at home recipe that you kids LOOOOVE! Super easy and quick. You can find shaved thin ribeye at Food Lion and most grocery stores in the beef section.
Ingredients:
- 2 sweet onions, diced
- 2 12 oz packs thin shaved ribeye
- 1 16 oz package Velveeta Quest Blanco
- 1 pack sub rolls
Preparation:
- Add 1-2 tablespoons of olive oil to a pan and cook onions on medium until caramelized, about 15 minutes. Remove to a bowl.
- Heat a skillet to high heat with a little more oil.
- Add shaved ribeye in 1 layer to the pan, slicing and chopping it as it cooks, for about 2 minutes. Remove to a sheet pan.
- Repeat step until all meat is cooked and placed on sheet pan.
- Season cooked meat with salt and pepper and mix in onions.
- Cut Velveeta into chunks and place half in a bowl.
- Microwave cheese about 45 seconds or until melted.
- Mix melted cheese into meat and onions.
- Scoop into sub rolls and top with more cheese if needed.
- Wrap subs in foil and keep warm in a 200 degree oven until ready to eat.
