Shrimp quesadillas
My favorite type of quesadilla is a shrimp quesadilla. Well, let's be honest...my favorite quesadilla, taco, tostada, omelette, po boy, salad, and seafood basket is shrimp. I remember growing up at Carolina Beach in the summers at my dad's house and my favorite dinner out was at Big Daddy's. I ordered the shrimp basket every time. Anytime I'm making something with shrimp, I make a few extra to have in tacos or quesadillas. These are simple but so good.
Ingredients:
- 1/2 Pound of shrimp (makes about 3 large quesadillas)
- 2 Limes
- Chili powder
- Olive oil
- Chopped onions & pepper mix (fresh or frozen)
- Shredded cheese (like Monterrey jack or quesadilla cheese)
- Large tortillas
- Season shrimp with chili powder and toss in lime juice and 1 tablespoon olive oil.
- Cook shrimp in a pan for about 3-4 minutes until pink. Remove to a plate and cool.
- In the same pan, cook onions and peppers until soft (drain off any liquid if using frozen)
- Cut shrimp into bite-sized pieces.
- Clean pan, heat on medium high, and spray with olive oil spray or cooking spray.
- Place tortilla in pan and add shredded cheese, peppers, and shrimp and fold over.
- Cook about 1 minute per side until lightly toasted. (be sure to spray the other side as well with olive oil spray.
- Watch carefully so that you don't burn tortilla (might need to lower heat a bit).
- Remove quesadilla to a plate and use pizza cutter to cut int triangles.
- Serve with salsa, sour cream, guac, etc
