Rice Cooker Oatmeal or Grits

Your dad used to have a commercial rice cooker in his office at White Knoll where he would cook rice and add teriyaki sauce for the team to eat after their workout.  A rice cooker is one of our favorite time savers.  Nowadays there are instant pots that cook rice and lots of other things but you know how I feel about those contraptions.  This post is about how you can use a mini rice cooker to make things other than rice.  I use ours all the time to make oatmeal or grits for breakfast.  Here's how:


Oatmeal:  Put 1 cup of oats (not quick cooking ones) in the rice cooker bowl.  Stir in 2 cups of water and a pinch of salt.  Turn it on.  Every now and then you need to open it and stir so it doesn't stick or overflow.  Once it is done (switches to warm), stir in 1/2 teaspoon of vanilla and some cinnamon and your favorite toppings.  I like walnuts, blueberries, a little honey or real maple syrup.  

Tip:  I love to add this salad topper to oatmeal.


Grits:  Put 1/2 cup stone ground grits in rice cooker bowl.  Stir in 2 cups of water, milk, or broth and some salt.  Let cook, stirring from time to time.  Once done, add in some butter.
