Outback Style Smothered Chicken (Sandwiches)


This is kind of a take on Outback's Alice Springs Chicken which I love but I change it up a little to make it to our tastes.  You can smother cardboard with cheddar cheese and I would love it.  This goes great with broccoli salad and cheesy rice or you can put this whole think or a bun and call it a smothered chicken sandwich, which is probably what Chatham will do.  That boy puts everything in a bun.  You can cook this recipe on the grill or in the oven.  Directions for both are below.

Ingredients:

  • thin sliced chicken breasts
  • ranch seasoning
  • bacon
  • mushrooms
  • bbq sauce 
  • honey mustard
Grill Preparation:
  • Cook bacon strips to desired crispiness in a pan (I don't let them get too crispy for this dish, just cooked through.
  • Drain on a paper towel.
  • Remove most of the bacon grease from the pan but leave a little.
  • Add mushrooms and sauté for 3-4 minutes.
  • Preheat grill to medium high.
  • Season chicken with ranch seasoning and grill for about 4-5 minutes per side (if using thin sliced chicken, longer for thicker chicken).
  • Coat chicken with a layer of BBQ sauce and grill another minute per side.
  • Lower heat all the way down and top each piece of chicken with some honey mustard, mushrooms, bacon, and 2 slices of cheese. (this step could also be done in the oven using a sheet pan)
  • Close grill cover to melt cheese.
  • Serve with sides or as a sandwich with extra honey mustard, BBQ sauce, and some ranch on the side.
Stove Top/Oven Preparations:

  • Preheat oven to 350.
  • Cook bacon strips to desired crispiness in a pan (I don't let them get too crispy for this dish, just cooked through.
  • Drain on a paper towel.
  • Remove most of the bacon grease from the pan but leave a little.
  • Add mushrooms and sauté for 3-4 minutes.
  • Season chicken with ranch seasoning and brown in a pan for about 3-4 minutes per side (if using thin sliced chicken, longer for thicker chicken).
  • Coat chicken with a layer of BBQ sauce and place in a baking dish
  • Top each piece of chicken with some honey mustard, mushrooms, bacon, and 2 slices of cheese. 
  • Cook for 10 minutes to finish chicken and melt cheese.
  • Serve with sides or as a sandwich with extra honey mustard, BBQ sauce, and some ranch on the side.
