Quick Creamed Spinach

 

I love creamed spinach but some recipes have a lot of ingredients and are a bit time consuming.  This one is super simple and done in just a few minutes.  Also, you can add in some chopped canned artichokes and a little more cream to make this into a dip!

Ingredients:

  • 1 tbsp butter
  • 1/2 sweet onion dices
  • 2 cloves minced garlic
  • 2 - 8 oz packages of frozen spinach, thawed 
  • 5.2 ounce package Boursin cheese (I use chive & shallot flavor)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup heavy cream or half & half  
  • 10 Ritz crackers

Preparation:

  • Preheat oven to 375.
  • Melt butter in a pan and saute onions and garlic for about 5 minutes to soften.
  • Add in spinach, cheeses, and cream.  Mix and heat through.
  • Season with salt and pepper.
  • Add to a baking dish and bake for 15 minutes.
  • Top with crumbled Ritz crackers and freshly shredded Parmesan cheese and bake another 5 minutes.
