Quick Creamed Spinach
I love creamed spinach but some recipes have a lot of ingredients and are a bit time consuming. This one is super simple and done in just a few minutes. Also, you can add in some chopped canned artichokes and a little more cream to make this into a dip!
Ingredients:
- 1 tbsp butter
- 1/2 sweet onion dices
- 2 cloves minced garlic
- 2 - 8 oz packages of frozen spinach, thawed
- 5.2 ounce package Boursin cheese (I use chive & shallot flavor)
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream or half & half
- 10 Ritz crackers
Preparation:
- Preheat oven to 375.
- Melt butter in a pan and saute onions and garlic for about 5 minutes to soften.
- Add in spinach, cheeses, and cream. Mix and heat through.
- Season with salt and pepper.
- Add to a baking dish and bake for 15 minutes.
- Top with crumbled Ritz crackers and freshly shredded Parmesan cheese and bake another 5 minutes.
