New Years Black Eyed Peas
These beans have SO MUCH FLAVOR!! If you prefer your beans less salty then only use 1/2 of the country ham or use smoked ham hock instead.
Ingredients:
- 1 package of dry black eyed peas, soaked overnight or quick boil method completed
- 4 cups low sodium chicken stock
- 1-2 tbsp bacon fat or olive oil
- 1 onion, diced
- 1 large or 2 small green peppers, diced
- 3-4 cloved garlic, minced
- 1 package country ham slices
- 1 tbsp chicken bouillon base
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 1 tbsp italian seasoning
- 1 tsp black pepper
- 2 tsp Cajun seasoning or rib rub
Preparation:
- Soak beans overnight in water and drain or use the quick soak method by boiling beans for 2 minutes and let sit for 1 hour, drain and ready to cook.
- Add beans and chicken stock to crock pot.
- Cook onion, green pepper, and garlic in a pan with bacon fat or oil until slightly softened and add to crock pot.
- Ad other seasonings and ham to crock pot and cook on high for 4 hours.
- Serve with cornbread
