General Tso's Chicken
This is the best "at home" take out ever! For a shortcut, I use Trader Joe's vegetable fried rice and General Tao's sauce. You can make your own or find something similar in any grocery store.
Ingredients:
- 2 bags vegetable fried rice (I use Trader Joe's)
- 2 jars General Tao's sauce (I use Trader Joe's)
- 1 1/2 pound chicken breast cut into small chunks
- 2 eggs
- Corn starch
- Flour
- 2 small bags Steam Fresh frozen broccoli
- High heat oil like peanut, avocado, or canola
- Toppings: diced spring onions and sesame seeds
Preparation:
- In a shallow dish, combine 1/2 cup corn starch and 1/2 cup flour. Season with some salt and garlic powder.
- Whisk eggs in another shallow dish with a splash of water.
- Using a heavy, deep pan or wok, add about an inch of oil and heat to high.
- Coat chicken in egg mix and then dry mix and add in batches to oil when hot. Don't overcrowd the pan or wok.
- Cook about 2 minutes per side and move to a paper towel lined plate. Finish all chicken.
- Heat a wok to high and add some oil. Cook rice, stirring continuously until heated through and set aside in separate bowl.
- Microwave and drain broccoli.
- Add chicken and General Tso's sauce to wok and cook to coat. Toss in broccoli and plate.
