Chicken Cobbler

 


This recipe went viral on Tik Tok so I decided to try it out.  It was warm and cozy and alot like a chicken pot pie minus the pie part.  It was great the night I made it but leftovers were a bit soggy so I would not recommend it for leftovers.

Ingredients:

  • 1 whole rotisserie chicken, shredded
  • 1 box Red Lobster Cheddar Bay Biscuit Mix
  • 5 tbs butter
  • 12 oz bag frozen veggies or frozen peas and carrots 
  • 2 cups chicken broth
  • 1 can cream of chicken
  • 2 cups whole milk
  • 1/2 - 3/4 cup shredded cheddar cheese

  Preparation:

  • Heat oven to 350
  • Place a baking dish with 4 tablespoons of butter in oven to melt.
  • Add shredded chicken on top of butter and then add frozen veggie layer over chicken.  Season with some garlic powder, onion powder, and pepper.
  • Mix together the chicken broth and cream of chicken soup and pour over the veggie layer.
  • Add a layer of the shredded cheese.
  • Mix the biscuit mix and 1/2 of seasoning packet with milk and top casserole.
  • Bake for about 1 hour.
  • Melt remaining tablespoon of butter and mix in remaining seasoning.  Brush top of casserole and let cool 10-15 minutes before serving.
