Baked Tacos
I saw this recipe somewhere on social media and decided to give it a try. It was an instant hit with all of you...even your father who was in an anti-ground beef period. He ended up eating like 3 beef tacos!
Ingredients:
- 20 Hard taco shells - the ones that are wide and stand up
- 1 can refried beans
- 1 pound ground beef
- 1 pound chicken tenders
- 1 4oz can green chilies
- 1 can mild or medium enchilada sauce
- Homemade or store bought taco seasoning
- 2 8oz bags of shredded Mexican cheese
- Toppings: shredded lettuce, salsa, sour cream, guacamole
Preparation:
- Cook beef and drain. Return to pan and season well with taco seasoning, 1/2 can of enchilada sauce and 1/2 can green chilies.
- Season and cook chicken, then shred and stir in other 1/2 of enchilada sauce and green chilies.
- Warm refried beans in a small pot.
- Preheat oven to 400. Place 10 taco shells in 2 baking dishes standing up and bake for 5 minutes.
- Remove shells from oven and assemble tacos.
- Spread about a tablespoon of refried beans in the bottom of each shell.
- Top one baking dish with beef and the other with chicken.
- Top tacos with plenty of shredded cheese.
- Bake for 8-10 minutes to melt cheese.
- Top will lots of goodness and enjoy!
