Baked Tacos

 

 


 I saw this recipe somewhere on social media and decided to give it a try.  It was an instant hit with all of you...even your father who was in an anti-ground beef period.  He ended up eating like 3 beef tacos!  

 Ingredients:

  • 20 Hard taco shells - the ones that are wide and stand up
  • 1 can refried beans
  • 1 pound ground beef
  • 1 pound chicken tenders
  • 1 4oz can green chilies
  • 1 can mild or medium enchilada sauce 
  • Homemade or store bought taco seasoning 
  • 2 8oz bags of shredded Mexican cheese
  • Toppings:   shredded lettuce, salsa, sour cream, guacamole

Preparation:

  • Cook beef and drain.  Return to pan and season well with taco seasoning, 1/2 can of enchilada sauce and 1/2 can green chilies.
  • Season and cook chicken, then shred and stir in other 1/2 of enchilada sauce and green chilies.
  • Warm refried beans in a small pot.
  • Preheat oven to 400.  Place 10 taco shells in 2 baking dishes standing up and bake for 5 minutes. 
  • Remove shells from oven and assemble tacos.
  • Spread about a tablespoon of refried beans in the bottom of each shell.
  • Top one baking dish with beef and the other with chicken.
  • Top tacos with plenty of shredded cheese.
  • Bake for 8-10 minutes to melt cheese.
  • Top will lots of goodness and enjoy!
