Sweet Potato Pie
Once when Knox was younger he wanted to know why we only have Thanksgiving once a year. I thought this was a great point so we started having it twice a year, usually in July which is his birthday month. This is a simple pie recipe but y'all love it...especially warm with vanilla ice cream.
Ingredients:
- 4 medium sized sweet potatoes
- 1/2 cup melted butter
- 1 cup sugar
- 2 eggs
- 1/2 cup whole milk
- 1 teaspoon cinnamon
- 2 teaspoons vanilla
- 1 refrigerated unbaked pie crust
- vanilla ice cream for serving
Preparation:
Wash sweet potatoes and use a knife to stab potatoes a few times all around. Place on a sheet pan and bake for about 45 min to an hour at 400 degrees. Use a fork to see if they are very tender. Remove and let cool.
Once cool, remove skins and place sweet potato in mixer or a large bowl. Add all other ingredients except pie shell and mix well.
Place pie shell in a pie dish and pour in sweet potato pie filling. Bake for about an hour at 350 degrees. Check pie after about 40 minutes to see if crust is getting too brown. If so, use a piece of aluminum foil folded in half with a circle cut out of the middle to cover crust. Use a toothpick to check that the center of pie is done. When you pull out the toothpick it should not have much filling on it at all if any.
