Perfect Pork Chops
This recipe made me a pork chop hero in the house. I was looking for some new grilling recipes when I came across this one that I adapted from Food & Wine Magazine. Everyone in the family is a fan of fried pork chops but I wanted to master excellent grilled pork chops and this did the job. The cooking instructions produced perfectly juicy, done but not overcooked grilled chops with a sweet and spicy glaze...perfect for a spring day of grilling in South Carolina. Serve with homemade potato salad, grilled squash, and baked beans for a crowd pleaser!
Ingredients:
- 4 thick, center cut pork chops (about 3/4 to an inch thick)
- 1/2 cup honey
- 2 tablespoons low sodium soy sauce
- 1-2 tablespoons chili paste (Sambal Oelek - found in Asian foods section)
- 4 cloves minced garlic
- salt and pepper
Preparation:
- Season chops with salt and pepper
- Preheat grill to 450
- Mix all sauce ingredients in a small pot and simmer for about 5-7 minutes. Remove from heat and let cool. It will also thicken.
- Sear pork chops on each side for about 3 minutes. Turn and sear another 3 minutes per side to create a good sear crust from the grill marks.
- Lower heat to about 350 and let cook 7 minutes per side until internal temp reaches 145-150.
- Apply glaze and cook another minute.
- Remove and let cool, applying more glaze.
- Serve with extra glaze as needed.
