Zucchini Butter Spaghetti
OMG do not sleep on this recipe because it is delicious! I got this recipe from a favorite food blogger and author, the Smitten Kitchen, and honestly there is absolutely nothing that needs changing in it. It is a vegetarian dish but would be great alongside something mild like shrimp or scallops. Do yourself a favor and make this quick, easy meal when zucchini are fresh in season during the summer.
Ingredients:
- 3 medium sized zucchini, grated
- 6 tablespoons butter
- 4 cloves garlic, minced
- 8oz spaghetti
- 1 cup pasta water
- 1/2 cup parmesan cheese, plus more for serving
- 1/2 teaspoon red pepper flakes
- 1 1/2 teaspoons salt
- handful of fresh parsley or basil, chopped
Preparation:
- Melt butter over medium high heat and add garlic, cooking for 1 minute.
- Add salt, red pepper, and grated zucchini and cook for 15 minutes until it creates a paste, stirring occasionally. (Be patient here! The zucchini will first release water but it will mostly cook away)
- Meanwhile boil pasta to al dente, keeping 1 cup of the pasta water.
- Once zucchini butter is ready, add 1/2 cup of the pasta water and the spaghetti and toss together well.
- Mix in the parmesan cheese, parsley, and additional pasta water.
- Serve with garlic bread!
