SC Parmesan Garlic Baked Flounder
I've been eating flounder (and so have you guys) since I was a little girl. It's the flagship fish of the Carolina coast. Light, flaky, and mild....everyone loves it! My favorite way to eat flounder is, of course, fried, but this lighter yet just as delicious method of baking it in a parmesan and bread crumb mixture is a quick and easy alternative.
Ingredients:
- 2 large flounder filets (can be cut in half to make 4 filets)
- 1 cup Italian seasoned bread crumbs
- 1/2 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1 lemon (juice and zest used)
- olive oil
- salt and pepper
Preparation:
- Pat flounder dry with a paper towel and season with salt and pepper.
- In a baking dish, combine bread crumbs, parmesan cheese, zest of the lemon, garlic powder, and season with salt and pepper.
- Drizzle flounder filets with some olive oil and then dredge flesh side into bread crumb mixture, pressing mixture all over flex side well.
- Place filets on a sheet pan
- Squeeze the lemon juice over the filets and drizzle again with a little olive oil.
- Bake at 425 for 20 minutes.
- Remove from oven and sprinkle with chopped parsley.
- Serve with lemon wedges.
