Knox's Palmetto Cheese & Bacon Deviled Eggs

 


This Christmas (2021), Knox was all about making lots of deviled eggs.  For an added kick, he topped our traditional deviled eggs with chopped bacon and also added some Palmetto Cheese (SC's famous pimento cheese) to the mix too.  They were tasty and will likely be making a frequent appearance on our holiday tables.

To make them, follow the original deviled eggs recipe on the blog by boiling 6 eggs for 12 minutes.  Chill them in a bowl of ice water for about 15 minutes and then peel.  Remember:  peels go in the trash or compost NOT down the sink drain!  In addition to the regular mayo (about 1/4 cup) and the 6 cooked egg yokes, add 5-6 tablespoons of Palmetto Cheese to the mix.  Skip the mustard in these since the Palmetto cheese give these plenty of kick.  Mix well and then spoon into the egg shells.  Top with chopped bacon (about 3 slices cooked and chopped) and sprinkle with paprika.
