Simple Steak Sandwiches
Knox loves a good steak sandwich! When we went to visit him in Colorado in the Spring of 2021, I made these for him and his roommate along with a big batch of mac & cheese. Needless to say he ate well that week! The trick to this recipe is using thin cut steaks and onion rolls.
Ingredients:
1 Thin cut ribeye per sandwich (or used shaved ribeye for more of a cheese steak style sandwich)
Onion roll buns
1 sweet onion, sliced
Sliced cheese of choice (I like swiss, provolone, and gruyere)
Salt & Pepper

Preparation:
Season steak with salt and pepper.
Heat a tablespoon of olive oil on a pan to medium high.
Add onions and cook about 8-10 minutes until soft and caramelized.
Remove onions and turn up heat to high.
Add a tad more oil and 1 tablespoon of butter.
Since steaks are thin, cook about 1 minute per side, adding more butter as needed.
Assemble rolls with steak, top with cheese and then toast for a minute in the oven to melt cheese.
Top with onions and mayo!
