Meatball Subs

 


When I make meatballs I try to make a big batch and freeze a few bags of them.  This way I can grab a bag anytime for spaghetti and meatballs or for this family favorite...meatball subs!  If you don't want to make homemade meatballs you could use a bag of frozen meatballs too but I PROMISE it is worth the time and effort to learn to make them yourself.  

Ingredients:
Fresh or frozen everyday meatballs (or frozen variety)
1-2 jars of marinara sauce or use recipe below
Package of sub rolls of choice
Shredded Mozzarella cheese

Homemade sauce:
28 oz. can tomato puree
1 8 oz can tomato sauce
1-2 teaspoons sugar (taste and see what you prefer)
2 teaspoons each:  garlic powder, Italian seasonings, onion powder

Preparation:
Warm up sauce in a sauce pan.
For homemade sauce, mix everything in a sauce pan and warm up to a low simmer.
Add meatballs to sauce and cover.
Let simmer for 20-30 minutes.  Check 1 meatball to see if cooked / warmed through.
Open sub rolls and add meatballs and top with cheese.  
Note:  I often cut the meatballs in half so they fit onto the sub better.
Place subs on a sheet pan and toast for a few minutes in the oven to melt cheese.
