Easy Foil Packets


Foil packets were something simple and easy that your dad grew up eating in the mountains or when camping.  You can put countless different ingredients in the foil packet, spray with non-stick cooking spray and cook on the grill, camp fire, or right in the oven!  We have made some version of these almost every time we've vacationed in the mountains each summer. 

Ingredients:
1 smoked beef sausage per 2 people, sliced 
1 green pepper, chopped
1 red pepper, chopped
1 sweet onion, chopped
1 bunch spring onions, chopped
3 squash, cut in cubes
2 zucchini, cut in cubes
1 small frozen corn on the cob per foil packet 
1 tablespoon butter per foil packet
salt, pepper, garlic powder for seasoning
Heavy duty foil
Non-stick cooking spray

Preparation:
Once you have everything chopped, pull off 2 long pieces of heavy-duty foil.  
Cross the foil, one going vertical and one horizontal.  
Spray foil with non-stick spray.
Divide out sausage and veggies among the foils.
Top each with a tablespoon of butter.
Season each packet and close them up by tightly gathering the foil at the top.
Spray bottom side of foil packets as well if using a grill or fire.
Cook off the direct heat / fire on a grill checking for tenderness of the veggies every 10-15 minutes.
If cooking in oven, cook for about 30 minutes at 400.
