Texas Red-ISH Chili

 


Gordon loves a good Texas Red but Avery and I like a chili with some beans in it...so we compromised on this one to make an easy weeknight chili.  This is a Texas Red-ISH chili that makes us all happy!  Serve with "Daddy's Favorite Cornbread" for the win on a rare cold night and that's how we do it in SC!

Ingredients:

  • 1 1/2 1bs stew beef meat cut into small chunks
  • 2 tablespoons olive oil
  • 1 package Carroll Shelby's chili kit (see photo)
  • 1 can diced petite tomatoes
  • 1/2 can tomato sauce 
  • 1 can water or beef stock
  • 2 cans Mixed chili beans (see photo or 1 can each pintos, kidney, and black beans)
  • salt, pepper, and a dash of cayenne 

Preparation:

  • Season beef with salt and pepper.
  • Heat oil in a pan and sear beef.
  • Place beef, chili seasoning packet, tomato sauce, water or stock and diced tomatoes into a crockpot.
  • Cook on low for 4 hours.
  • Add beans and cook another hour
  • Serve with cheese and sour cream on top and a side of corn bread.
*You can make this without a crockpot as well in a regular large soup pot or Dutch oven.  Same process, simmer on low about 2 hours and then add beans.
