Black Bean Avocado Salad



I got the idea for this salad from a blog called Clean Food Crush but altered the ingredients and dressing to fit out family and to be super fresh and fast.  It's been a hit this summer (2020).

Ingredients:
1 can black beans, drained and rinsed
1/2 large English cucumber, cut in half lengthwise, seeded, sliced into U shapes
1 large tomato or 4-5 Roma tomatoes, chopped large and seeded
1/2 red bell pepper, diced
1/4 red onion, diced
1 avocado, chopped 
1/4 cup Bolthouse Farms Cilantro Avocado Yogurt Dressing (or something you like)

Preparation:
Prep all of your veggies above and mix everything together.  
Put in the fridge for about 15 minutes or so before serving to chill.
