Beef Stroganoff
Sometimes I get obsessed with a new kitchen gadget and I must have it. This was the case in 2018 with the Instant Pot. It was all the craze in cooking appliances, promising to make delicious food super fast. So I bought one in an after-Christmas sale. I tried some recipes in it a few times but truth be told it was a great lesson. The lesson was that all you really need for great cooking are a few basic things: a good sheet pan, a solid cast iron skillet, a non-stick skillet, a dutch oven, a stock pot, and some casseroles. Oh yeah, everyone should have a crockpot too for those busy nights when you need to throw on a roast and let it cook all day. However, I did find this one recipe that I still use my Instant Pot for because it turns out perfectly every time....Beef Stroganoff. It's a recipe from a popular blog called Damn Delicious....check it out. Note: if you don't have an instant pot, you can make this in a dutch oven or regular large skillet too.
Ingredients:
2 lbs stew beef meat, cut into smaller bite-sized pieces
olive oil
3 cloves garlic, minced
1 onion diced
8 oz baby bella mushrooms, roughly chopped
2 tablespoons flour
1/4 cup dry sherry
3 cups beef broth
a few splashes of Worcestershire
12 oz package of wide egg noodles
3/4-1 cup sour cream
Preparation:
Set Instant Pot to high saute and add oil.
Season beef with salt and pepper and add stew beef to pot in two batches and brown.
Remove to a plate.
Add onions, mushrooms, and garlic to the pot and cook a few minutes until soft.
Mix in flour and cook another minute.
Mix in sherry, stock, Worcestershire, and beef.
Cook on manual pressure cooking high for 12 minutes.
When finished, quick-release pressure.
Stir in noodles and cook on high for another 5 minutes.
When finished, quick-release pressure and stir in sour cream.
Add additional salt and pepper to taste.
Note: If you don't have an Instant Pot (because they will surely go out of style) you can do the same thing in a dutch oven or large skillet with a lid. Just follow the same steps except let beef simmer covered for about an hour then add noodles for another 15-20 until soft. Add sour cream at the end.
