Family Pizza Night!




Back when we lived in Oak Island, we couldn't find a pizza place that had a pesto-based pizza (white pizza) and your dad was going through a phase where he didn't like tomato-based pizza.  So, we started making pizza at home!  Nothing fancy, just store-bought crust and a variety of toppings to make them our own.  This tradition of making pizza at home grew as our family grew and we have tried all sorts of toppings along the way.  The best part of it all is time spent together in the kitchen!  Below are a few favorites!

Note:  I really like the Stonefire brand Artisan Thin Crust Pizza crusts!

Gordon's Thin-Crust Pesto Pizza:
One thin crust
Olive oil
Pesto
Pepperoni
Black olives
Sliced mozzarella
Shredded mozzarella
Sliced Roma tomatoes

Preparation notes:  Rub olive oil all over the crust, then spread on a layer of pesto.  Add layers of toppings and bake at 450 on a pizza stone for 6 minutes.

Chatham's Supreme Pizza:
One regular or thin pizza crust
Pizza sauce
Pepperoni
Bacon, cooked and chopped
JalapeƱos
Mushrooms
Shredded mozzarella

Preparation notes:  Spread a layer of pizza sauce on crust.  Top with shredded cheese, then meats, then more cheese, then veggies, and a final layer of cheese.  Bake at 450 on a pizza stone for 6 minutes.


Mom's BBQ Chicken Pizza:
One regular or thin pizza crust
BBQ sauce
1 piece of chicken (cooked or grilled and chopped - you can use a leftover piece)
Shredded Jack-cheddar cheese mix
Red onion, diced
Bacon, cooked and chopped
JalapeƱos

Preparation notes:  Spead a layer of BBQ sauce on your pizza crust, top with cheese, toss the chicken in some BBQ sauce and add it.  Sprinkle on the bacon and veggies.  Add another layer of cheese and bake at 450 on a pizza stone for 6-7 minutes.
