Pizza Bites
It doesn't get any easier than this for an afternoon snack or lunchbox change-up! These pizza bites are fast and easy to make and yet everyone (even the adults) love them. This recipe is a great way to use up leftover pasta sauce, cheese, and tortillas and you can change up the ingredients to make something totally different like ham and cheese bites or taco cups too. I cook these in a regular 12 muffin pan.
Ingredients:
3-4 Flour burrito size tortillas
20 Pepperoni, cut in quarters
1 1/2 cups mozzarella cheese
1 cup Pizza sauce or leftover pasta sauce (plus more if needed)
Preparation:
Preheat oven to 400.
Cut tortillas into circles or squares that will fit the muffin cups. I use a round chopper that I have to do this fast.
Spray a muffin pan with baking spray and place one of the cut tortillas in each muffin cup. For a thicker, more sturdy crust add 2 tortillas to each cup.
In a bowl, mix together 1 cup of sauce, pepperoni, and 3/4 cup of cheese.
Put a spoonful of mixture onto tortillas and top with more cheese.
Bake for 10 minutes (longer if you used more sauce)
Remove from oven and use a large spoon to scoop them onto a plate or cooling rack.
Let cool for 10-15 minutes before serving.
