"Fried" tortillas
We love tacos. We just do. And we love them on "fried" corn tortillas. Here is how that is done.
Ingredients:
Corn tortillas (yellow or white but I like yellow lol)
1 tablespoon olive oil

Preparation:
A cast-iron skillet here is preferred but you can use any skillet.
Heat skillet to high and add oil.
Use a tortilla to spread oil all over the skillet.
Add a couple tortillas to the pan (whatever fits).
"Fry" on each side about 30 seconds to 1-minute max. Keep checking each side to make sure they are getting toasted but not black!
Add a little salt.
Once they are toasted remove to a plate and make your tacos.
*Note: if you are toasting a lot of these you have to keep adding oil a little at a time each time. Yes, your kitchen might get smoky with this. No, you cannot leave the stove during the process...you have to keep a close eye on them so they don't burn. Yes, it will be worth it! Love you!
