Fancy Stuffed Flank Steak
I really love goat cheese. Is that weird? I love the tangy, creamy flavor and texture of it. Well anyway, I love the filling for this flank steak roll-up that I found in Eating Well magazine. It's beautiful, easy. and tasty.
Ingredients:
1 lb flank or flat iron steak
1 cup spinach
3-4 oz herbed goat cheese
1/2 cup roasted red peppers, chopped
2 tablespoons olive oil
Salt and pepper for seasoning
Preparation:
Preheat oven to 425.
Place steak on a piece of parchment paper or a cutting board and cover with plastic wrap.
Using a mallet, beat steak until about 1/4 inch thickness.
Spread goat cheese and spinach down the center, roll up tight, and secure with kitchen swine every 1-2 inches or so to keep the roll together.
Heat oil to medium-high in a large oven-proof skillet and add the steak roll-up; brown on all sides.
Place in the oven for another 10-15 minutes until just medium-rare inside.
Let rest and then slice into portions.
