Classic Sweet Potato Casserole



This is a Thanksgiving classic that everyone loves.  The pecan topping on this casserole makes this dish almost more of a dessert than a side.  This is my mom's recipe.

Ingredients:
Thanksgiving 2019
3 cups of cooked sweet potatoes (3 large or 6-7 small potatoes)
1 1/2 cups sugar
2 eggs
1/2 stick melted butter
1 teaspoon vanilla

Topping:
3/4 stick of butter
1 cup brown sugar
1/2 cup self-rising flour
1 cup chopped pecans

Preparation:
Bake sweet potatoes until soft throughout and let cool.  Scoop out sweet potatoes to measure 3 cups and add to mixing bowl.  Mix in sugar, eggs, butter, and vanilla until well mixed. 

Mix together topping ingredients until well incorporated and crumbly.  Spread topping over casserole and bake at 375 for 35-40 minutes.
