Easy Chicken Parmesan
This is a another go-to dinner for the Walters Fam. We really like it when we are cutting back on carbs because you still feel like you are eating Italian even without the pasta. But....serving this on top of a pile of spaghetti with sauce and a side salad is awesome.
Ingredients:
1 package thin sliced boneless skinless chicken breasts (you can but them already thin sliced but to save $ I buy them and slice them myself)
1 jar of pasta sauce
2-3 cups Italian seasoned panko bread crumbs
1 egg
1 cup milk
canola oil
Preparation:
In a bowl whisk egg and milk together.
Put panko in another bowl.
Add in oil to coat a skillet and heat pan to medium high. Also, preheat oven to 375.
First soak chicken in milk mixture and then coat well in panko. Repeat for all pieces.
Add chicken to pan and cook about 1 minute per side to get a crust on each side. Remove to a baking sheet and cook in oven for 5 minutes.
Remove from oven and spoon pasta sauce over each piece of chicken and top with mozzarella cheese. Bake for another 5 minutes until cooked through and cheese is melted.
Serve with a salad or over a pile of spaghetti with sauce.
