Chocolate Chip Banana "Ice Cream" Bites




So you know how your father loves ice cream? ...like how he can clean out a carton in one night if he gets started.  Well, these little frozen treats have been the semi-healthy answer to our night time ice cream cravings.  Just 2 ingredients!   I got this recipe from a great blog I follow called The Baker Mama.  She always has great baking and cooking ideas.

Ingredients:
4-6 ripe bananas
1/2 cup mini chocolate chips, plus extra for topping

Preparation:
Slice bananas up (not too thin, not too thick, about 1/4 -1/2 inch slices but don't stress)
Place slices on a sheet pan and put pan in the freezer for about an hour or two.
Then, place frozen slices in a blender or food processor and blend until they become an ice cream like consistency.  I use our blender and do it in a couple batches so it doesn't get all clumped up.
Transfer the banana "ice cream" to a mixing bowl and mix in the chocolate chips.
Spoon or use an ice cream scoop to fill a regular muffin pan or a mini muffin pan about 2/3 full with the mixture in each muffin cup.
If you have extra you can add more to each cup.
Top with extra chocolate chips and place in freezer for about 2 hours until frozen.
Use a spoon to scoop out the "ice cream" bites and store in a plastic container with lid and parchment paper between layers.
Use the mini muffin pan for bite sized treats and a full size pan for larger ones.
