Shortcut Caribbean Shrimp and Rice
Ok this is definitely the easiest, quickest recipe ever and you can make it so many different ways. In fact it's less of a recipe and more of a tip. The tip? Store-bought rice mix is your friend! Zatarain has several different types of rice mixes that you can use to make this recipe. For this one I chose the Caribbean rice mix which has a hint of curry, coconut, and pineapple. But you could also use their Spanish rice mix and pair some spicy Chorizo sausage with it or their red beans and rice mix with chicken. The shrimp however....never skimp on fresh, quality seafood! Finding an easy base side like this where you can mix things up and just add in a meat makes for a simple and quick weeknight family dinner paired with a salad.
Ingredients:
1 6oz box Zatarain's Carribean Rice mix

1/2 cup of a sweet BBQ sauce (you could also use a sweet teriyaki sauce)
1 tablespoon of butter or olive oil
Preparation:
Prepare rice as directed on package. Consider amping it up with some extra pineapple and peppers if you have them on hand. (Adding fresh ingredients to packaged always helps!)
Heat olive oil or butter in a saute pan to medium heat.
Coat shrimp in BBQ sauce and add to the pan.
Saute for about 3 minutes or until shrimp have all turned pink.
Serve shrimp on top of rice!
