Welcome Fall with Pumpkin Spice Waffles
Something happens when Fall arrives. I want to cook and bake all the time. I want smell good candles lit around the house all the time. Thanksgiving is coming and it's cooler outside which means the perfect time for anything pumpkin spice. I made these waffles one Sunday morning in October and even other people's kids came over to get them! Serve with scrambled eggs and sausage links or bacon for a complete Sunday breakfast.
Ingredients:
2 1/2 cups flour
1/3 cup brown sugar
2 1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin spice mix
4 eggs
1 cup milk
1 cup buttermilk (or make your own with 1 tablespoon lemon juice and the rest milk)
1 cup pumpkin pure
3/4 stick butter melted
Powdered sugar, chopped walnuts, and/or maple syrup for topping
Preparation:
Mix together flour, brown sugar, baking powder and baking soda, salt, and pumpkin spice in a bowl.
In a different bowl, mix eggs, milk, buttermilk, and pumpkin. Add flour mixture to the pumpkin mixture and combine well. It will be thick and lumpy.
Heat and spray your waffle iron and when ready scoop about a cup of the batter into the hot iron and cook for about 3-4 minutes depending on your waffle iron.
Use a fork to remove to a plate and top with powdered sugar.
