Spicy Black Beans



I might be the only one who really loves black beans in the family but just in case one of you also does or your future children do....here is a recipe for the best spicy black beans ever!  I love to use these in my lunch meal prep for taco salads with pulled chicken or sauted shrimp and shredded lettuce.

Ingredients:
1 pound bag black beans
cumin
chili powder
salt
pepper
Cayenne pepper
1 sweet onion chopped
3-4 garlic cloves smashed
Cholula or other Mexican hot sauce

Instructions:
First rinse beans and follow the quick soak method for soaking the beans and drain.
Add beans to a large pot with chopped onion and garlic cloves.
Cover beans with water plus 3 more cups.
Bring beans to a boil then reduce heat to a simmer for about 2 hours.  Add water as needed if it is all soaked up by beans.
Remove garlic cloves.
Add 2-3 teaspoons of cumin, several dashes of hot sauce, 2 teaspoons of Cayenne pepper, and 2 teaspoons of chili powder.
Add salt to taste.  And if it isn't spicy or smoky enough add additional Cayenne, cumin, and hot sauce 1 teaspoon at a time.
Cover and continue cooking another hour or until beans are soft but not mushy.
