Southern Baked Beans
I could eat baked beans with most any meal but when you have a little potato salad, a little NC BBQ, and a side of baked beans....OMG! That's where the good stuff is. If there are hush-puppies included too just move out of the way because here I come. These baked beans are a little more trouble than just opening a can but they are worth it. They pair so well with ribs, NC Que, burgers, anything really plus this recipe usually provides a side for 2 nights for us. This is my mom's recipe and it's all about taste testing for the sweetness you like.
Ingredients:
1 green pepper diced
1 Vidalia onion diced
2 large cans pork n' beans, drained
3 tablespoons ketchup (more if you like it sweeter)
1-2 tablespoon mustard (more if you like it tangier)
1/3 brown sugar (more or less depending on how sweet you like it)
6 slices bacon
Preparation:
Cook bacon about half way though. It will cook the rest of the way in the oven.
Add beans to a bowl and mix in diced green pepper, onion, ketchup, mustard, and brown sugar.
Taste mixture to see if more of something is needed.
Pour into 9x13 dish and top with bacon.
Bake at 375 for about 45 minutes.
