Pea Salad


Before I married your father I had never heard of "pea salad".  He would make it as a side dish for dinner every now and then and eventually I started making it too.  You can add all sorts of things to make it fancy or keep it simple as well.  It makes a good cool side with Summer meals or even on holidays.

Ingredients:
2 cans of sweet peas, drained well
1/2 minced or diced Vidalia onion
1-2 tablespoons mayonnaise
Salt and pepper

Optional Additions:
1/4 cup shredded cheddar cheese
Bacon crumbles or diced ham

Preparation:
Add drained peas to a bowl.
Mix in onion and mayo.
Season well with salt and pepper.
Refrigerate until well chilled.
Mix well before serving.
