Orange Honey Glazed Carrots


I made these carrots recently and fell in love with them.  They are sweet and savory and the orange gives them a fresh flavor that anyone would love.  They also reheat well if you need a make-ahead side dish.  Plus, they are so pretty!  I got this recipe from Ina!

Ingredients:
1 large bag of carrots, washed, peeled, and cut into pieces
2 tablespoons butter
1/2 cup water
2 tablespoons honey
1/2 teaspoon all spice
1/2 teaspoon cinnamon
1/2 cup juice from a fresh orange
1 teaspoon orange zest

Preparation:
Melt butter in a large pot.
Add water, honey, and spices and bring to a boil.
Add carrots and cook for 20-25 minutes stirring often until most of the liquid has evaporated.
Add orange zest and juice and cook another 5 minutes.
Be sure carrots are cooked but not mushy (like al dente).
