Classic Mac & Cheese



Macaroni and Cheese is always a crowd-pleaser.  It's good creamy, baked, and even boxed has its place.  I think Mac & Cheese is hands down the most requested side dish for Gordon and all you kids.  We have it for every major holiday and Knox swears by Mac & Cheese with gravy on top!  I'm not so sure about that but he loves it!

Ingredients:
1 16 oz box macaroni, cooked according to directions
4 cups shredded cheese (cheddar or a blend of your favorites)
4 tablespoons butter
1/3 cup flour
2 cups whole milk (don’t be using skim lol)
Lots of Salt and Pepper

Preparation:
Preheat oven to 350.
Boil macaroni based on box instructions and drain.
Meanwhile, melt butter in a saucepan on medium heat and then mix in the flour.  Stir constantly for about 30 seconds until all of the flour cooks out.
Warm milk in microwave for about 45 seconds to take chill off.
Slowly add in milk, whisking CONSTANTLY to keep from over thickening.
Once all milk has been added and you have a nice creamy consistency, stir in 2 1/2 cups of cheese and salt and pepper liberally.
Also, add salt and pepper to cooked macaroni.
Mix together cheese sauce and pasta well.
Pour mixture into a 9x13 pan that has been sprayed with cooking spray.
Top with the remaining 2 cups of cheese.  Cover with foil so that it doesn't touch the cheese.
Bake for about 20 minutes at 350.
Remove foil and cook another 5-6 until top cheese is just slightly cooked.
