Everyday Meatballs
Meatballs are like the perfect little ball of goodness that you can use in so many different ways: in pasta, in sliders, in subs, in different sauces for Gameday....sweet 'n sour, bbq, Swedish...I can keep going! These meatballs can be made and frozen in different serving sizes for any of the above. Just pick your dish or sauce and pop these frozen babies right in! This recipe is adapted from the Smitten Kitchen.
1 pound lean ground beef
1/2 pound ground pork
1/2 cup panko (I use Italian seasoned)
2 eggs
1/3 cup milk
2 tablespoons grated parmesan cheese
2 tablespoons grated parmesan cheese
1 teaspoon each of salt, pepper, onion powder, garlic powder, and Italian seasoning
Preparation:
Gently combine all ingredients using a fork until everything is well incorporated throughout. Use a tablespoon or small ice cream scoop to scoop out and shape meatballs placing them on baking sheet lined with parchment paper or wax paper. Once you have them all on the baking sheet(s), put them in the fridge for about 30 minutes to set.
Warm sauce of your choice on low and add meatballs to cook for about 20-25 minutes.
If freezing: Don't cook and instead place them in the freezer for 30 minutes to flash-freeze and then they are ready to bag up into different serving sizes.
We love them in marinara served in meatball subs toasted in the oven with mozzarella cheese.
