Daddy's Collards
There is nothing more Southern than collard greens. Your daddy grew up eating some type of greens 3-4 times per week. They are plentiful during the winter months and a tradition on NewYear's Day. They are tasty with pork, chicken, and fried seafood. Your dad swears that the best part is the "pot liquor" these make with cornbread. You'll need a crockpot and save yourself a lot of trouble by buying the pre-cut and washed collards. Here's how you make them....
Ingredients:
1 pound bag of already chopped and washed collards
1 pork jowl
chicken broth
red pepper
salt
garlic powder
water
Preparation:
Cut the pork jowl into quarters and place in the corners of a crockpot.
Add all of the collards to the crockpot...they will reduce significantly so push them all in there.
Add about a cup of chicken stock.
Add salt, garlic powder, and red pepper flakes to about 2 cups of water and then pour over collard.
Be sure there is enough water in crockpot that you can see it at the top but it shouldn't cover the collards.
Let cook on high for about 4-6 hours until they are as tender as you like.
