Christmas Breakfast Casserole

When y'all were little, Christmas morning came early and with a whirlwind of wrapping paper, boxes, and things to put together! Breakfast needed to be simple and ready to eat. I learned this breakfast casserole recipe from your dad early in our marriage during some of our first few Christmas mornings together. I love this casserole with a little hot sauce drizzled on top....yum!
Ingredients:
A dozen eggs
A bag of frozen hash browns
1 small onion, diced
1 green pepper, diced (or 2 diced jalapeƱos for spicy mornings)
2 cups of shredded cheddar and jack blend
1 can cream of chicken soup
1 can cream of mushroom soup
1 package of breakfast sausage (we like Neese's hot)
salt
pepper
Preparation:
Thaw hash browns if frozen.
Brown sausage with onion and pepper and drain off all fat.
Crack eggs in a bowl and whisk well.
Spray your crockpot with cooking spray.
In a large bowl add hash browns, sausage, eggs, canned soups, shredded cheese, and mix well. Season well with salt and pepper.
Pour mixture into crockpot, top with additional cheese.
Let it cook overnight on low and you have breakfast ready to go for an early Christmas morning!
**you can also layer this in the crockpot as well: hash browns, soups, sausage, cheese, repeat.
