Beef and Bean Burritos
Chatham Walters will kill 4-5 of these at least. He loves them and they are so easy. These were inspired by my a post from the Pioneer Woman.
Flour tortillas
28 oz can red enchilada sauce
1.5 pounds lean ground beef
1 packet taco seasoning
28 oz can refried beans
lots of shredded cheddar or Mexican blend cheese
Cholula or your favorite hot sauce
Sour cream for topping
Preparation:
Brown beef and drain. Add in taco seasoning and a little water.
Mix in half of the enchilada sauce and stir.
Warm refried beans in a pot on low. Stir in a cup of shredded cheese and mix until melted.
Now it's time to assemble the burritos!
On a tortilla, add some beans first to one end. Then top with a little beef and a sprinkle of cheese. Fold in sides and roll up tight. Place seem side down in a baking dish. Repeat until dish is filled with about 10.
Top burritos with a little more of the enchilada sauce and cheese. Bake at 350 for 15 minutes until cheese is melted.
Serve with Cholula and sour cream on top!
