Stuffed Shells

One of my college roommates, Jenny, used to make stuff shells when we had people over for dinner.  So the other day I was thinking about that and decided to make them.  I think Chatham enjoyed it because he at like 5 shells.  "Mom, you can definitely make this again!"  ~Avery

Ingredients:
1 box jumbo shells
1 pound lean ground beef and/or Italian sausage
1 jar of your favorite marinara sauce (2 if you like it saucy)
1 10oz frozen package of spinach
32 oz part skim ricotta
1/2 cup grated Parmesan cheese
2 cups shredded Mozzarella cheese, divided
1 egg
Salt, pepper, basil, garlic powder for seasoning

Preparation:
Boil shells according to package instructions.
Drain shells and let cool.
Season beef with salt, pepper, and garlic powder.
Cook beef in a pan, chopping up well and drain excess fat.
Add pasta sauce to beef and mix well.
Let simmer for about 20-30 minutes.
Heat spinach in microwave and then drain very well.
In a bowl, mix together ricotta, Parmesan, egg, 1 cup of the mozzarella, spinach, and salt/pepper/basil.
Preheat oven to 350.
Cover the bottom of a 9x13 baking dish with pasta sauce.
Once shells have cooled, fill each one with a big scoop of the ricotta mixture and place them in the baking dish.
Top with additional sauce.
Cover with foil and bake for 25 minutes.
Top with 2nd cup of mozzarella.
Bake another 10 minutes uncovered.
Remove from oven and let cool about 15 minutes.
