Okra and Green Tomatoes
Okra is one of the South's top summer crops. And you can find it showcased in soups, sautes, and as a fried side most everywhere. I recently bought some fresh local okra at one of our favorite produce places, Cad's Produce. Mr. Cad told me how he likes to make okra so I thought I would give it a try. The combination of the tart green tomatoes and okra are fantastic!
Ingredients:
1/2 green tomato, diced
1 pound of fresh okra, chopped
3 strips of bacon
1 tablespoon olive oil
2 cloves garlic minced
Salt and pepper
Preparation:
Cook bacon strips to crispy and remove from pan.
Leave about 1 tablespoon of bacon fat in pan.
Cook okra in same pan until lightly browned and cooked, salt okra well, about 10 minutes.
Add garlic and tomatoes and cook another 5-8 minutes until tomatoes are softened.
Crumble bacon over top and serve!
