Mom's Smash Burgers

Chatham likes an extra slice of cheese on his!
I'm not sure there is anything that Chatham, Knox, and Gordon like more than a good burger.  For us, thin patties are the key so smashing that meat as thin as possible is your goal.  These burgers can be made as doubles or singles.

Ingredients:
1 pound lean beef
Sliced cheese (cheddar, muenster, pepper jack, whatever you like)
Buns
Toppings of choice

Preparation:
Use an ice cream scoop to scoop out meat and form into balls
Season meatballs with salt and pepper
Heat skillet to medium high.
Place 2 meatballs (1 if making singles) in hot pan and use a spatula and a can to smash the meatball into a thin burger patty.
Cook about 30-45 seconds and flip.
Add cheese to both patties and cook for another 30-45 seconds.
Top one patty with the other and place on bun.
Top with condiments and toppings of choice.
I recommend a little mayo, lettuce, and tomato!
