The Best Butter Beans
After our many "In Search of Soul Food" trips we noticed they all had one thing in common: lima beans! In the summer of 2017 we went to Martha Lou's in Charleston and let me tell you...their lima beans were the best I'd ever tasted. Interestingly there was a reporter there from the Post and Courier who took a pic or me taking a selfie with Martha Lou's daughter who runs the restaurant now. Click here to see the article and pic!
Well after that your father was then determined to come up with his own recipe and he was successful! This is a take on soul food lima beans and my childhood favorite butter beans, peas, and corn.
Ingredients:
1 pound fresh butter or lima beans
1 package country ham pieces
1/2 onion diced
1 packet french onion soup
salt & black pepper
red pepper flakes
garlic powder
1 can black eye peas
1 can corn
2 cups rice cooked
water
Preparation:
Rinse beans and remove any bad ones, rocks, etc
Add beans, country ham, onion, and french onion packet to crockpot
Add water to crockpot at least 2 inches above ingredients.
Season with salt, pepper, garlic powder, and red pepper to taste.
Cook overnight or all day on low.
Test beans occasionally for tenderness and seasoning.
With one hour left, add black eyed peas and corn.
Serve over rice with cornbread.
