Strawberry Pie
My oh my, strawberry pie! |
Chatham, you learned how to pick, clean, and slice strawberries quite young. You love strawberries so much that a strawberry birthday cake is your choice even though it's pink!! This recipe is so good and cold during the summer with a big heaping dollop of whipped cream on top!
Ingredients:
1 frozen or refrigerated pie shell (thawed if frozen)
A bunch of strawberries (at least 4 1/2 -5 cups), washed and sliced about a 1/4 inch thick
1 cup sugar (or less if strawberries are very sweet)
3 tablespoons cornstarch
3/4 cup water
Preparation:
Bake pie crust according to package instructions and cool completely.
In a small pot, add a cup of the strawberries with the sugar and cornstarch and water and mix, smashing the strawberries.
Bring mix to a boil and stir until it thickens and then remove from heat and let cool.
Spread remaining strawberries into pie shell and then pour cooked mixture over them.
Use a spoon or spatula to smooth out and refrigerate the pie for a few hours.
Top pie with whipped cream!!
