Simple Bean & Rice Burritos
One of our favorite places to eat in Wilmington has always been Flamin' Amy's Burrito Barn. They have the best salsa bar and killer, fat burritos! My personal favorites are the Thai Me Up and the Baywatch! Back at home we make tacos and burritos often and one reason is because they are so quick and easy to make. These bean burritos are an easy meatless Monday dinner that takes less than 25 minutes to prepare.
Ingredients:
Flour tortillas (burrito size)
2 cans of refried beans with green chilis (if you can't find these just add a small can of green chilis to the beans)
1 package Mexican style rice (I like Vigo brand)
Shredded cheddar and Monterrey jack
Salsa, Cholula, sour cream
Preparation:
Prepare rice according to package instructions.
Warm beans in a pot, stirring occasionally until heated through
Assemble burrito:
Not into meatless? Toss in some leftover chicken or steak! |
Add a layer of beans and rice to one side of the tortilla and leave room on both sides of the tortilla for folding in the edges to roll.
Top rice and beans with cheese.
Pop in the microwave for about 10 seconds to melt cheese.
Add Cholula, salsa, and/our sour cream lightly
Fold in sides and then roll burrito forward.
You can use a little sour cream to "glue" down the tortilla at the end.
